For now, let's learn how to make juicy pan seared salmon top with either salsa or avocado sauce!
Cooking the salmon
Ingredients - -> 1 lbs. salmon fillets, 3 tbs extra virgin olive oil, some organic kelp granules salt alternative and ground black pepper for seasoning (you may use regular salt and pepper if you wish)
Directions: Rub both sides of fillets with kelp granules and pepper. Next, heat skillet with olive oil on medium high heat until smoke almost comes out. Plop fillets into skillet and make sure the skin side is down. Cook until desired doneness. I go for medium which takes about 4 minutes to cook for each side.
Making the sauces
Salsa sauce ingredients - -> 2 tbs of apple cider vinegar, 1diced avocado, 1 diced red capsicum, 1 bunch of roughly chopped parsley, 1 cup of halved cherry tomatoes and 1 tbs olive oil
Directions: Drop all ingredients in a bowl and mix thoroughly.
Avocado sauce ingredients - -> 2 large diced avocados, 1 tbs of chopped parsley and shallots, 3 tbs of freshly squeezed lemon juice and 3 tbs olive oil.
Directions: Drop diced avocados and lemon juice in a food mixer and blend away. Next gradually add the olive oil and blend until sauce is consistent.
What next?
Well…just place salmon fillets on a plate, pour either sauce on top of the filets, grab a knife and fork – you're good to go! This is one of my favorite paleo seafood recipes so give it shot!
